2007 was a great vintage for cabernet in the North Coast and throughout California.
Mother Nature gave us a mild winter followed by a dry spring pushing the grapes to
begin ripening earlier than usual. The summer was cool and temperate, until late
August, when the heat arrived. Thinner skinned varieties were harvested quickly,
but thick-skinned Cabernet, Syrah, and Merlot handled the heat beautifully, and
flavors continued to develop through a cooler September with light, intermittent
rains. By the second week of October, harvest, part II, kicked into high gear as
grapes needed to come in before heavy rains began at the end of the month. It
wasn't the most typical year in terms of weather, and the crop was pretty light, but
one of the best vintages of the decade in terms of quality - intense fruit
development, silky tannins, great acidity.
The 2007 Cannonball Cabernet Sauvignon presents a lively, dark ruby color, like burgundy velvet. Aromas of fresh berries, spice, and pepper with a faint background of vanilla oak are very much reflected in the mouth. Full and rich with bright acidity, the berry and spice flavors are boldly presented along with racy, red
fruit and vanilla-cherry on a layer of cocoa. The finish is classic Cannonball, smoothe, long, delicious. I recommend enjoying between now and 2011 to really get the most of the big fruit., but really let the wine open up in your glass to experience all the layers and complexity. For those preferring a more mature and
mellow style, decant for one hour before serving.
You can't go wrong with enjoying Cannonball with a big piece of quality red meat, a great burger, short ribs, barbeque. I had a bottle with my wife over a great thin crust pizza, and even she agreed it was terrific. I hope you enjoy.
